White wine resulting from the blend of 50 different resistant PIWI grape varieties grown up to 800 meters above sea level. The must and skins are left in cryomaceration for several days in order to extract more aromas and flavors. This is followed by racking, alcoholic fermentation, and subsequently spontaneous malolactic fermentation. If the quality of the grapes allows, a portion is vinified in concrete amphorae.
