Our farm produce the highest possible quality of Parmigiano Reggiano, we are certified organic but mostly we produce the cheese with "vacche Bianche" (white cows) that are the autochthonous cows from the region or Modena. during the middle of the 20th century this breed of cow together with the "Rossa Reggiana" was the main responsible for the production of Parmigiano Reggiano. More than 140.000 cows were registered, now after the "invasion" of the Holstein that is by large more productive (and at the same time with a milk quality much lower) only 600 cows are left and it is considered at risk of extinction. The milk of the vacca bianca has a level of B-casein that is y far superior and produce a better flavour in the Cheese.

Not only our farm produce organic Parmigiano Reggiano with vacche bianche, but due to a history fo the farm that dates back to the fourtheen century and a very large extension we keep our cows completely free to pasture, this again give the cows a much better quality of life (the average age of our cows is 3 or sometime even 4 times higher than in traditional farm with holstein cows) which in turn produce a higher quality milk and cheese.

In average every day almost 10.000 wheel of parmigiano reggiano are produces, among these only 5-6 are from vacche bianche and only the 2-3 wheels are certified organic
