Acetaia Marchi was founded in the early 1900s by the Marchi and Cioni families. Francesco Marchi and his wife Savina, Maurizio's grandparents, had been sharecroppers in the fields of Modena for about thirty-five years before the Second World War: a period during which peasants drew their livelihood from the cultivation of very small farms and from the rearing of animals in the farmyard. In the attic of the Marchi house, Francesco and Savina kept small barrels. The precious balsamic vinegar, according to tradition, was exchanged or given as gifts on special occasions. The love for balsamic vinegar was passed on, day after day, to his grandson Maurizio, who, with the same passion, intensified the production of Traditional Balsamic Vinegar of Modena.

Over the years, Maurizio passed on the passion to his son Massimiliano. The family now has a new, renovated and expanded headquarter in the countryside close to the city of Modena, with several hectares of indigenous D.O.P. grape varieties. The supply chain is therefore complete: from the grapes to the finished product, offering the highest guarantee of quality in the Modena area. Traditional Balsamic Vinegar of Modena D.O.P. Aged at least 12 years and Extravecchio over 25 years. Their characteristic feature is the long and special ageing period, the stages are followed with extreme precision. The end result is a pure and precious Traditional Balsamic Vinegar of Modena PDO (DOP). We also produce the PGI (IGP) balsamic vinegar of Modena, which is also aged in wooden barrels.Additional we produce the Condiments (Dressings) produced with cooked must and wine vinegar, aged in barrels.
